Pastry Manager 

Job Purpose and Primary Accountability:   
The Pastry Manager is a key member of the Bakery Leadership Team and is responsible for all activities that occur in the pastry department at Easy Tiger. The Pastry Manager is committed to coaching and developing employees and works closely with the Head Dough Puncher and Bakery GM to achieve this.  All lead, assistant lead, and pastry bakers report directly to the Pastry Manager. This position is responsible for creating and maintaining a positive environment for staff to ensure that a quality product is produced. This person serves as a role model to employees and behaves as such. 
 
REPORTS TO:  General Manager 
SALARY / GRADE LEVEL:  Salaried / Exempt 
 
Essential Functions: 
Hiring: Interviews and schedules stages for potential employees. Hires qualified candidates as needed to maintain adequate staff levels. 
Scheduling: Ensures that the schedule is posted 2 weeks in advance utilizing scheduling systems effectively to develop schedule according to budget. 
Coaching: Work with bakers, assistant leads, and leads to help them become well rounded in all stations of the department. Provides feedback to pastry leads to help develop bakers and keep them on track for continuous growth. 
Training: Coordinates training for new hires and cross training for employees as they progress from station to station. 
Production Flow: Direct bakers, assistant leads, and leads on the shift to complete tasks as efficiently as possible. Clearly define who is responsible on the shift for each task.  Hold bakers, assistant leads, and leads accountable for time expectations and consistency. Rearrange the order of the products as necessary to meet deadlines. 
Food Safety & Cleanliness: Ensures employees complete all logs as assigned as part of the HACCP plan. Monitors daily, weekly, and monthly cleaning projects and ensures all employees complete tasks in a timely manner. Follow all FDA, State, and City of Austin Health Department Standards. 
Communication: Utilizes proper channels of communication and stays in close contact with other bakery managers.  Writes professional shift notes at the end of each shift. Attends all required meetings and implements plans for improvements discussed in each meeting. 
Maintenance: Follows maintenance protocol to report emergency and standard maintenance needs. 
Ordering: Completes all ordering and inventory duties using provided pars and budgets. 
New Product & Holiday Specials Communication: Communicates new products and recipes to bakery team and ensures proper production schedules are in place.  Communicates holiday special information to bakery team in order to ensure proper production scheduling and ordering. 
Operations: Follows all Easy Tiger standard operating procedures. Supports the overall bakery leadership team as needed. 

 
ESSENTIAL REQUIREMENTS:  
  • High School Diploma/GED or equivalent combination of education and experience  
  • Three (3) years minimum with wholesale product distribution management  
  • Current Texas Food Manager Certification is required, HACCP and PCQI is preferred  
  • Proven leadership and motivational skills  
  • Displays a professional appearance and is a positive role model for the distribution team  
  • Strong verbal and written communication skills  
  • High client satisfaction expectations and focus  
  • Resourceful problem-solving skills  
  • Self-motivated and driven  
  • Strong ability to multi-task projects simultaneously  
  • Holds self and others accountable to consistently maintain high performance standards  
  • Proficient computer knowledge (Microsoft, Excel & Google Suite) and office skills required  
  • Ability to lift 50 lbs
  • Ability to stand for prolonged periods of time
